Salads Galore!

Salads bring colour, crunchiness, freshness and any amount of an abundance of good things to any table…any meal…any time…

… so here’s a brief celebration of how to make a meal out of salad …’n’…stuff … 🙂


New Potatoes in a garlic dressing and scattered liberally with Sumac.

Boil the new potatoes, (get organic and cook them in their skins)… until very tender.

Strain, and allow to cool for 5 mins, letting the excess moisture evaporate…

In a bowl, add a glug or two of olive oil, a big pinch of salt and 3-4 peeled + crushed garlic cloves and a pinch of black pepper.

Place the potatoes in the bowl while they are still warm.

Toss the potatoes in the dressing.

Sprinkle liberally with Sumac – a beautiful lemony peppery spice from the middle east.


Ruby Red Crunchy Salad.

Wash and finely slice half a red cabbage. Then chop the ribbons of cabbage crossways to dice.

Layer in a bowl with:

finely sliced sticks of celery

sliced radish

and pomegranate seeds

Dress with fresh lemon juice and seasonings…


Smashed Avocado and Beans with Red Onion.

Place a peeled and roughly chopped ripe avocado in a bowl.

Add about 200gms. of pre-cooked white beans such as cannellini.

Roughly smash the beans and avocado.

Finely slice half a red onion and scatter around the smashed beans/avocado.

Mix a dressing of garlic, olive oil, balsamic vinegar salt and pepper.

Pour over the bean and avocado salad.


Sprouted Pulses + Chicory, Celery, Fennel, Radishes and Herbs

finely chop parsley, basil, chives and dill….

mix it all together

Rocket   Lamb’s Lettuce   Mustard Greens   Chinese Cabbage

Spinach   Mizuna Greens   Water Cress

the list goes on



much much more


For dressings think lemons, vinegar, olive oil,

non-dairy yogurt, vegan mayo, tahini

mustard, black pepper and salt

garlic, herbs and spices such as paprika, chilli and turmeric




Serve with bread or baked potatoes … or in a wrap … or just naked…









PS…leave out anything you don’t like 🙂
